What is Agricole Rhum?
Agricole Rhum is made with fresh sugarcane juice, as opposed to most rums, which are distilled from fermented molasses.
To produce Rhum, distillers first ferment freshly pressed sugar cane juice with wild, native yeasts to produce sugar cane wine, which they then distill into a rough, funky, extremely aromatic spirit, that is more botanically driven than sweet. For a rhum agricole to be labeled as such, it has to be made with sugar cane juice, not by-products such as molasses, which is used in making most of the rums on the market.
The style originated over a century ago, with the threat to the islands sugarcane industries posed by the availability of cheap sugar from the beet sugar; sugar producers responded by devising a way of using the entire sugarcane for making rum.
The simplest distinction between rum and Agricole Rhum is that RUM is always made with Molasses (an industrial byproduct of sugar production), whereas Agricole Rhum is made straight from fresh pressed sugarcane juice.
Some avoid using the term rhum agricole as they do not follow all of the traditions of historical styles, but other distilleries using fresh sugarcane only use freshly pressed sugarcane rather than molasses, distilling it only a day or two after picking, and thus generally focus on showing off the plants most pure flavors.

Martinique
A riff on a Myrtle Bank Punch that replaces dark Jamaican rum with Martinique rhum agricole and grenadine with Chambord liqueur.
4 parts Martinique rhum agricole
2 parts freshly squeezed lime juice
1 part Chambord liqueur
1 part Luxardo maraschino liqueur
2 dashes Angostura bitters per 100 ml of cocktail

Mit dem Labourdonnais Lady Blue präsentiert uns die auf Mauritius ansässige Distillerie de Labourdonnais seit Frühling 2022 eine spannende Spirituose auf Rum-Basis. Die Brennerei verwendet für diesen Rum den frischen Saft des eigens angebauten Zuckerrohrs auf Mauritius und brennt im Column Still einen herrlich frischen leicht grasigen und fruchtigen Rum. Hierbei handelt es sich um einen Blend aus sechs und zwölf Monate alten Mauritius-Rum, der in Ex-Bourbon Fässern (amerikanische Weisseiche) von Jim Beam bei tropischen Temperaturen reifen durfte. Danach wird der Rum per Mazeration mit interessanten Gewürzen wie z.B. Vanille und zudem mit Holzchips aromatisiert und nachgereift. Bei dieser Mazeration entsteht ein recht interessantes Aromen Profil, welches beim Genuss des Rums für große Freude sorgt. Er zeigt sich sehr facettenreich und überrascht mit jedem weiteren Schluck den Rumgenießer. Abgefüllt wird der Labourdonnais Lady Blue (Spirituose auf Rum Basis) mit einem Alkoholgehalt von 40 % vol. in eine 0,7 Liter runde Glasflasche. . Der recht zugängliche und runde Rum Lady Blue von Labourdonnais, schmeckt und duftet leicht nach Amarena Kirsch, gefolgt von frisch gebackenen Bananenbrot und einer leichten schwachen Brise Minze. Mix #160 Cherry Blossom
1.5oz white rum 1oz pineapple juice 1oz cream of coconut 3/4oz lime juice 1/2oz blue curacao 1/2oz cinnamon syrup
Shake well with plenty of ice and pour into hurricane glass.
Created by Justin Wojslaw,from the book Minimalist Tiki. Despite the name,there is no cherry in the drink,and it's actually turquoise colored instead of red. So it's pretty much the perfect drink for the way things work in DC. It's sweet and creamy with a cinnamon profile. Pretty good,if a bit touristy.

Mix #161 Cherry Pie Tai
1.5oz Demerara rum 1/2oz rhum agricole 3/4oz Cherry Heering 3/4oz lemon juice 1/2oz orgeat
Shake with ice and pour into Mai Tai glass.
I love Mai Tais,so a cherry version was perfect to go with the blossoms. Created by Nathan Robinson,it pretty much tastes like a tart cherry Mai Tai. Quite nice.
Mix #162 Paradise Cooler
2oz white rum 1/2oz Cherry Heering 1oz velvet falernum 2oz orange juice 1oz lime juice
Shake with ice and pour into double old fashioned glass. Garnish with cherry speared with an apple slice.
This was the house drink of the Denver Hilton in the 1960's. It's tart and citrus-y with some spice and a bit of cherry finish. Very nice. A good Tiki drink for cherry fans.

Mix #163 Hemingway Daiquiri
2oz white rum 3/4oz lime juice 1/2oz grapefruit juice 1/2oz maraschino liqueur*
Shake with ice until chilled,then strain into coupe glass.
*I used Cherry Heering.
So,the story goes that Ernest Hemingway went into the El Floridita bar in Havana to use the restroom. On the way out the bartender was setting up a line of daiquiris and Hemingway decided to try one. He commented that it wasn't bad,but he preferred twice the rum and no sugar. So the bartender made one his way and named the drink after him. And over time it has morphed into the recipe above. No idea if any of this is true,but it's a good story. Since Ernest was a man's man,I decided to use Smith & Cross navy rum instead of white rum. The result was a VERY tart drink(I did use Heering which is tarter than maraschino liqueur). I didn't want Ernest's ghost to haunt me and call me a wuss,so I finished it,but if I were ever to make another I'd definitely dump in some simple syrup. If tart's your thing,then you might like this.

1oz 151 rum* 1oz Cherry Heering 1oz lemon juice 1/2 oz simple syrup
Shake with ice and pour into double rocks glass.
*I used Wray & Nephew Overproof.
I came across this recipe in a Facebook group. According to Beachbum Berry's book Remixed,this was created in the Swamp Fox Room bar in the Francis Marion Hotel in Charleston, South Carolina sometime in the 1950's. It was inspired by a story about hero of the Revolutionary War,General Francis Marion(AKA,the Swamp Fox),who supposedly broke his ankle jumping from a second-story window of the hotel while trying “to escape sober from a party at which this drink was flowing too freely.” Again,no idea if this is true but a good story is a good story. While 151 rum is intended for this,the poster used Wray & Nephew Overproof(which is "only" 126 proof) and since I have W&N and have been meaning to use it more,I used it too. And since I like funk I also doubled down and used Demerara syrup instead of regular simple. Very nice. This drink is very daiquiri-like. The rum really came forward with just a bit of cherry finish. Of course with overproof rum it had some kick. I'm going to make this again with some other rums just to play around with it.

If you wanna get into rum but don't know where to start, trying rums in a Ti' Punch is a great way to sample them.
This is intended for pot still rums or otherwise rums without added sugar or flavorings.
Rhum agricole is the suggested rum style used in the punch but it works just as well for Jamaican or demerara. Try Neisson Agricole (blanc or aged), Wray and Nephew's (Jamaican pot still) or Lemon Hart & Son 151 (demerara). All of them are around $20-30. Good rum doesn't cost much at all!
I recommend on the rocks since its like a rum old fashioned. Also "sugar cane syrup" is so damn pretentious. Use simple syrup. Heat 1 part water with 2 parts sugar and stir constantly until completely dissolved. Let cool before using.

Its so fun to me that some people have headcanons about Francis feeling guilty for abandoning Canada, because I also do but it bears reapearing that: France still very much owns the islands he exchanged Canada for.
Like no as a commonwealth or special territories but as French provinces. And that pathetic man will sometimes feel guilty over abandonning such a Great Nation (who is rich and white) for his ambitions and think that at least Quebec bears his glorious cultural heritage. All of this as he is sipping a glass of rhum agricole (French Antilles style rum) in Point a Pitre and Fort de France where he went for his winter vacations.
And I can imagine Martinique and Guadeloupe just speechless cause they've know this man for four hundred years and they are still amazed about how out of touch he is.

COCKTAILS A LA MAISON
Hello cocktail lovers:
Today I'd like to introduce you to a cocktail based on Madeira Cuvée 980 Rhum Agricole.
During my trip to Madeira, this absolutely wonderful island and its people, the idea was born and here's the result. Enjoy the tasting.
Bond club Madeira :
Recipe:
40 ml Rhum Agricole brun de Madeère cuvée 980.
20 ml cinnamon syrup
10 ml Vanilla syrup (monin)
80 ml melon juice
2 scoops coconut sorbet
Pour all ingredients into an electric blender.
Blend for 10 seconds and strain into a long-drink cocktail glass over ice.

Aujourd’hui je vous présente un cocktail à base de Rhum Agricole de Madère cuvée 980.

So your Uncle Giltron is still playing with his bottle of Green Chartreuse. After a year of trying to find it,by the Smoking Baboon I'm going to mix it. It's hard to find good recipes that use it because it's kinda rare,but I've got a pair for you I think you'll really like,provided you can find all the ingredients. Enjoy!

Mix #219 Swamp Angel
2oz rhum agricole blanc 1oz lime juice 1oz pineapple juice 3/4oz Green Chartreuse 1/2oz orgeat 1/2oz falernum 1/4oz allspice dram 2 dashes Angostura bitters
Shake or blend with ice and strain into glass with fresh ice(I shook it).
From Justin Oliver and Chad Austin on the Facebook group,Tiki Recipes,this is sweet with a creamy mouthfeel and lots of spice and herbs. It also has some real kick. An excellent cocktail with lots of flavor.

3/4oz Appleton Signature rum 3/4oz Rittenhouse rye* 3/4oz Green Chartreuse 3/4oz Giffard Banane Du Brasil** 3/4oz blue curacao 1/2oz Benedictine 3/4oz Don's Mix 3/4oz lime juice 2 dashes grapefruit bitters
Shake with ice and pour into glass. Top with a bit of grated nutmeg.
*I used Crown Royal. **I used Tepus Fugit Creme de Banane.

So if you can find a bottle of Green Chartreuse,grab it,it's an excellent addition to your home bar. And follow my advice and you won't waste any.
